Watermelon Lemonade

Zest of one large lemon
3/4 cup fresh squeezed lemon juice
1/4 cup honey
1-1/2 cups ice cold water
1 lemon sliced thin for garnish
2 pounds of seeded watermelon, remove rind

In a food processor, puree the melon until smooth.  Strain the pureed melon through a mesh strainer.  Stir to get most of the liquid thru.  Pour the melon juice into a large pitcher and add the lemon zest.  Set aside.  In another bowl, whisk together the lemon juice and honey until the honey dissolves.  Stir this mix into the melon juice and then stir in the water.  Cover and refrigerate till ice cold.  Serve over ice and garnish with the lemon slices.
