Sausage and Peppers6 pounds or about 18 links of Italian Sausage, hot or sweet or combo For the stove Top: Heat a large heavy skillet and add a little olive oil about ¼ cup. Add Peppers and onions a pinch of salt and pepper. Cook for about 10 minutes on medium High heat. When peppers and onions begin to soften, remove and set aside. Place all Sausages into skillet and brown well. Cover and let simmer on low heat for about 20 Minutes. You may want to cut your sausage into chunks 2 inch after part way cooked. This is a matter of your choice. Uncover pan and add your onions and peppers and set Heat at medium; give the pan a shake and let simmer until hot. Serves about 12. You may also cook all the above on your grill. Just cook while turning until sausages are cooked through and the peppers and onions are charred and wilted, about 20 min.
