ESPRESSO RUB??
Next to my chocolate barbecue sauce this coffee might be my next favorite
choice. My espresso rub is perfect on chicken, beef, pork or
ribs.
About 1/4 cup of dark brown sugar
1/4 cup chili powder
1/3 cup fine ground espresso (do not use instant)
2 tablespoons granulated garlic
(do not use powdered)
1 tablespoon dehydrated onion
1/2 teaspoon good cinnamon
1 teaspoon sea salt (course is best)
1 tablespoon black peppercorns
Place all in a spice mill or blender and grind to a course powder. Rub
into you choice of meat and let sit for 20 min or so then the Barbie.
Good Bar-B-Q. For a mocha twist, throw in a little ¼ cup cocoa powder
to your mix. This will make about 1 1/2 cups and you may freeze in an
airtight for up to 3 months.
ENZO loves his espresso on and in
almost everything two shots for breakfast straight up, if not ENZO go Crazy.
