Kids Pannini
Try this Turkey Breast Panini (the word is Italian and means
"sandwich"). An added bonus is to ask the child to spell it and have a
little fun with the word. Tell them you learned to make it from your long
lost Uncle Luigi!
3 Tablespoon low fat Mayo
3 Tbl. low fat plain yogurt
4 Tbl. grated Parmesan Cheese
1 tsp. lemon juice
2 Tbl. shredded fresh basil
2 tsp. expeller pressed canpla oil
8 oz. sliced turkey breast
8 slice of whole wheat bread
8 slices of large tomato
Mix all the wet ingredients together with the basil and Parma cheese and
set aside. Heat a large skillet and add about a teaspoon of the oil to
coat the bottom of pan. Lay out your bread and put about a teaspoon of
the spread on each slice. Place the Turkey Breast slices and tomato slices
evenly distributed on each bread slice. Place the top slice of bread on
each. Then, with spatula place each sandwich into pan. Leave about three
minutes in med-high heated pan, then turn, and here is the fun part...
Place a 15 oz. foil wrapped can on top of each sandwich to press the Panini
together. Leave for about three or four minutes and serve - without the
can. Cut diagonal. For more fun, have the kids foil cover four right sized
washed off rocks and use them to press the sandwich. Serves 4.
