Hard Bread Salad
(Panzanella Salad)

1 pound cubed crusty hard bread
5 chopped Roma tomatoes
6 slices red onions
1/3 cup EVOO or more (extra virgin olive oil)
pinch of shaved Parmesan cheese
1/4 cup red wine vinegar
8 fresh basil leaves - chopped
1/2 English cucumber - sliced
1/4 cup fresh spinach - chopped
handful of black olives (optional)

Toss together, marinate for 1 hour in refrigerator. Serve and enjoy!
