Grilled Fresh Marlin

with Mango Relish

 

1/4 cup of expeller pressed canola as needed 1/4cup of sweet onion chopped fine
1 small seeded jalapeño, seeded and minced fine
1 medium to large ripe mango peeled, seeded and diced
½ cup roasted red pepper, diced
¼ cup tequila
1 lime, fresh squeezed juice
1 Tbs. cilantro, fresh, chopped
4-6 Fresh Marlin steaks

 

Lightly brush Marlin Steaks with oil. Sprinkle a little salt and cracked black pepper both sides. Place on a hot grill. About 3-4 min. each side or to desired temperature. Careful not to over cook. Mango Relish: Can be done ahead. Sauté onion in a little oil until translucent. Add minced jalapeños and sauté a few minutes. Toss in the roasted red peppers and mango. Remove pan from heat and add tequila. Slowly bring back to heat and flame the dish. Remove from heat and add fresh lime juice and fresh cilantro. Set aside. Spoon a bit of Mango mixture into middle of plate. Place grilled Marlin on top of mixture. Then spoon a small amount of mango mixture on top of the Marlin. You may serve a small mixed green salad with vinegar and oil dressing on the edge of the same plate if you like.
