ESPRESSO Rub?


Next to my chocolate barbecue sauce, this coffee might be my next favorite choice.  My espresso rub is perfect on chicken, beef, pork or ribs.

About 1/4 cup dark brown sugar
1/4 cup chile powder
1/3 cup fine ground espresso
2 tablespoons granulated garlic
1 tablespoon dehydrated onion
1/2 teaspoon cinnamon
1 teaspoon sea salt
1 tablespoon black peppercorns


 

Place all in a spice mill or blender and grind to a course powder.  Rub into your choice of meat and let sit for 20 minutes or so then the Barbie.  Good Bar-B-Q.  For a mocha twist, throw in a little 1/4 cup cocoa powder to your mix.  This will make about 1.5 cups and you may freeze in an airtight for up to 3 months.
