Never Throw HARD Bread at Your Sister This
will only make her more vengeful and most of all - it will be a terrible
waste of good food. The humblest of Tuscan dishes, are made of formally
very good fresh crusty Italian bread which has been around too long - HARD.
EnzoAbout 8 thick slices of Italian bread... slice first, and let it get stale or very hard. Or, if a stale loaf, do the best to chop it up into about 1x1 inch pieces. (We don't have to be perfect here.) Soak the Hard Bread for about 10 minutes then squeeze out most of the water between your hands. Place the bread in a large bowl; add the tomatoes, onion and basil leaves, give a light toss. Mix the oil, vinegar, salt and pepper and pour over the salad. Toss well serve room temperature. You may make this a bit spicier with red pepper flakes, capers, anchovies, garlic. If you like it throw it in... all the better. An ENZO favorite
